Whoever said that Halloween treats can only be full of sugar and as unhealthy as possible has never been on Fork & Beans. I’m proof that holiday food can still be fun and yep, you got it, completely healthy! I have skeleton dips, witches fingers, and even monster cups, all made with real ingredients and meant to be fresh and yet still festive. These Refined Sugar Free Watermelon Skulls are no different! Made with watermelon, berries, and a homemade dairy free whipped cream, no sugar ever touches this recipe or your child’s lips! Now what happens on Halloween night and inside your kid’s Trick-or-Treat bag, that is not in my control so I’m off the hook (wink).

What makes these skull snacks refined sugar free (aside from the fact that it is almost completely made with fruit), is that the coconut whipped cream is actually sweetened with Pyure stevia blend* making it so ridiculously simple to swap out the sugar.  What you’ll need to make these Refined Sugar Free Watermelon Skulls:

  • Pyure stevia blend (vegan, non GMO)
  • canned coconut cream, chilled
  • watermelon, thick slices
  • blueberries
  • kiwi
  • strawberries
  • raspberries
  • sunflower seeds 
  • carrot matchsticks
  • skull cookie cutter
  • small circle cookie cutter

Refined Sugar Free Watermelon Skulls

Serves: 4 Watermelon Skulls

Ingredients
  • 4 thick watermelon slices, cut into skulls
For the Whipped Cream (dairy free):
  • 1 can coconut cream, completely chilled
  • ½ tsp. Pyure Stevia blend
  • 1 tsp. vanilla extract
For the decorations
  • 4 kiwi slices, cut 2 small circles from each slice (for the eyes)
  • 16 blueberries (for the eyes and cheekbone decor)
  • 2 raspberries, cut in half (for the nose)
  • 48 sunflower seeds (for the teeth and head decor)
  • 4 matchstick carrots (for the mouth)
  • 1 strawberry, sliced (for the head decor)

Instructions
  1. Pat each skull with a paper towel to capture as much of the moisture as possible.
  2. Empty the chilled coconut cream into a large bowl. Discard the liquid and keep only the thick cream.
  3. Using an electric mixer, blend the cream over medium speed until it begins to fluff up (approx 1-2 min). Add the Pyure stevia and vanilla and blend until just combined.
  4. Coat the whipped cream over each watermelon skull.
  5. Top with the various fruit decorations to create a skull face. See the post for picture instructions.
